Skillet Chicken Primavera

Ingredients
   *1 1/2 cup raw chicken strips (breast)
   *1/3 cup all-purpose flour
   *1 Tbsp. chopped parsley
   *1 tsp. crushed basil
   *2 Tbsp. olive oil
   *1 clove minced garlic
   *1 (19 oz.) can vegetable soup
   *1/2 cup sliced mushrooms
   *1/2 cup diagonally sliced green onions
   *3/4 cup halved cherry tomatoes
   *1/2 cup sliced zucchini
Directions
In small bowl, toss chicken in flour, parsley, and chopped basil until well coated.  In a large skillet, heat olive oil and garlic;  add chicken and cook until lightly browned and no longer pink.
 
Pour in soup, mushrooms, green onions, tomatoes, and zucchini.  Stir over medium heat until heated through.  Makes 4 servings.

Banana Bran Loaf

Ingredients
   *1 cup bananas (2 to 3 or more)
   *1/2 cup sugar (or less)
   *1/2 cup vegetable oil
   *2 egg whites
   *1/2 cup skim milk
   *1 1/4 cup flour (you can also use stone ground wheat)
   *1 cup oat  bran
   *1/2 tsp. baking soda
   *2 tsp. baking powder
Directions
Preheat oven to 350 degrees.  Bake 55 to 60 minutes.
 
Mash bananas.  Mix in sugar, oil, egg whites and milk.  Blend well.  Add flour, oat bran, baking soda, and baking powder.  Mix in.  Lightly spray loaf pan or you can make muffins, just bake less time.
